Fall is literally one day away, and it is finally starting to cool down (barely but hey, I'll take it) here in SoCal. We've had a heat wave the tail end of August and this girl is not used to humidity! That coupled with the devastating fires has made this season even crazier weather-wise. Nonetheless, it's nothing that we can't handle right? 2020 is just getting us stronger and more agile to curveballs, I guess.
Anyways, on to what you're really here for - this delicious creamy dijon chicken pasta! One of my favorite dishes is chicken dijonnaise, which is a French chicken dish in a creamy mustard sauce. I absolutely love dijon mustard and have had a version of this sauce in so many restaurants. It's creamy, a little tangy from the mustard, garlicky, and just plain scrumptious. I'm literally licking my plate after - that is how good this sauce is!
I almost always add whole grain mustard to any sauce that has mustard in it so that you can visually tell that there is mustard in the sauce. It also amps up the mustard flavor, so it's a great addition. I used sour cream for the creamy element since that was all I had on hand, and it turned out perfectly! The tanginess of the sour cream went so well with the mustard. Basically you have to give this dish a try because it is one of the best comfort foods!
- pasta of your choice, extra virgin olive oil, butter, garlic, dijon mustard, whole grain mustard, chicken stock, sour cream, cooked rotisserie chicken pieces, grape tomatoes, salt, pepper
- optional garnishes: parmesan cheese, chives, lemon, extra virgin olive oil, freshly cracked black pepper
