As many of you are well aware, October is Breast Cancer Awareness Month. October is a time where individuals promote overall good health and being educated on how to self-assess. Unfortunately, I think almost every person either has been affected or knows someone who has gone through some form of cancer. I personally became involved with breast cancer awareness through my sorority in college, and to this day October will always remind me of the amazing survivors and their journeys.
Since we are heading into October within the next couple days, I thought I’d share some simple but delicious recipes that involve cruciferous vegetables. Cruciferous vegetables like broccoli, cauliflower, kale, brussel sprouts and cabbage to name a few – are super beneficial for fighting against cancer. Broccoli and cauliflower are always on repeat at my house + I feel like they’re the most used, so I wanted to share recipes that involve those two vegetables for you this week!
The broccoli salad is the perfect cold side dish to serve alongside almost anything, but especially with barbecued meats/dishes. The dressing is so incredibly simple (click here to check out the full slaw dressing recipe + other sauces) and uses ingredients you probably already have in your pantry. The additional salad toppings like bacon, green onion and sunflower seeds are of course optional, but I think they add so much texture and flavor to the dish that they might as well be considered essential to the recipe. Feel free to swap out the bacon bits for thinly sliced salami or vegetarian meat substitutes if you want to make this more healthy.
The second recipe involves another favorite vegetable – cauliflower! Everyone has been trying different variations of cauliflower – from rice to pizza crust to bases for creamy sauces. The bright red color of the finished cauliflower comes from the spice paste I made that was inspired by North African harissa paste. It has chilies, tomatoes, garlic, and tons of spices (click here to check out the full harissa paste recipe + other sauces), so a little goes a long way. I rubbed the cauliflower florets with the harissa paste and roasted it in the air fryer until they were tender but not mushy.
