Are you trying to scramble together a last-minute Valentine’s dinner? Well you’re in luck today, because that’s exactly what I’ve got for you! I’m taking a dish we all know and love and adding a special touch of saffron to elevate it. Valentine’s Day should be a little special, so why not go the extra mile and do something different?<\/p>\n

This creamy pasta excludes any dairy products, and uses coconut milk instead. The tomato, garlic and saffron are the stars, so don’t worry about the coconut milk overpowering anything. Just a touch to make it luxurious and velvety is all you need. I also intentionally used angel hair pasta since it cooks so quickly, but you can use any pasta of your choice and it will work well with the sauce.<\/p>\n

Even if you can’t make this for Valentine’s Day, I highly recommend you try this at home for your next dinner idea.
