Are you trying to scramble together a last-minute Valentine’s dinner? Well you’re in luck today, because that’s exactly what I’ve got for you! I’m taking a dish we all know and love and adding a special touch of saffron to elevate it. Valentine’s Day should be a little special, so why not go the extra mile and do something different?

This creamy pasta excludes any dairy products, and uses coconut milk instead. The tomato, garlic and saffron are the stars, so don’t worry about the coconut milk overpowering anything. Just a touch to make it luxurious and velvety is all you need. I also intentionally used angel hair pasta since it cooks so quickly, but you can use any pasta of your choice and it will work well with the sauce.

Even if you can’t make this for Valentine’s Day, I highly recommend you try this at home for your next dinner idea.
