FESTIVE FALL SALAD

As promised per my Instagram story polls, I'm sharing some of my favorite fall recipes with you on the blog! This festive fall salad is full of amazing deep flavors like balsamic vinegar and honey, and incorporates heartier fruits like pear that makes this salad perfect for fall.

I love sautéing all kinds of fruits like pears, peaches and plums in balsamic vinegar, honey, extra virgin olive oil and a little bit of salt and pepper to create a really fast but delicious glaze. It only takes a few minutes for the vinegar and honey to bubble up before the entire mixture begins to thicken and the pears start to soften.

Once the pears are cooked to your liking (remember - no mushy fruit), add them on top of a bed of mixed greens and a few shavings of parmesan cheese. The pears and cheese are so flavorful that I find that I don't need any vinaigrette or dressing, but you can always add a bit more balsamic and olive oil to taste. I just finish the salad with some chunky Maldon salt and freshly ground black pepper and it is soooo good!

This salad is the perfect combination of sweet and salty, warm and cold. I love dishes that have a little bit of everything, and this salad is just that but without the complications of too many ingredients or steps. Serve this with other fall dishes like a squash and kale flatbread, or creamy parmesan pasta, or serve it as a main entree with a nice thick slice of a toasted country loaf.
