This week’s food post is literally one of the prettiest and elegant ones because it looks like a little canapé! It’s my play off the traditional salmon blini, but you just switch out the pancake base with cucumber instead.

I absolutely love this as a healthy snack or even as an appetizer when I’m still craving something light and fresh. You just cut up the cucumbers (my favorites are the Persian cucumbers because you don’t have to peel or de-seed them) into little slices about ¼ inch thick. I recommend making them more thick than thin so they don’t fall apart after you put the toppings on it. 

Speaking of toppings – smoked salmon is one of the greatest pleasures of life, is it not??? It’s great on a traditional lox bagel with cream cheese and capers, on top of an arugula salad…you name it. Smoked salmon is very salty, so you don’t need large amounts of it to experience its incredible flavor. My favorite smoked salmon is the lox version because it is cured in a salt/sugar rub. The texture becomes firmer and when sliced thinly, creates the best mouthfeel because it is so silky. 

In addition to the delicious taste, salmon is one of the healthiest foods you can eat! Salmon is famous for its omega-3 fatty acids, for lowering blood pressure and its anti-inflammatory properties.
