






Butternut squash is making another appearance in this mac and cheese recipe. I used the leftover roasted butternut squash from my Fall Crostini recipe and blended it in a creamy, cheesy sauce. You can essentially do this with any vegetables if they're about to go bad or if you have leftover roasties like I did.
I think there's half a block of cheddar in this recipe so this is not healthy by any means just because we added some butternut squash. It is still decadent, hearty, and completely soul-warming from the first bite to the last.
