This is the perfect salad to make for a Valentine's Day date night in, or any time really - especially during winter since oranges are in season. Some of my favorite oranges are the Cara Cara and Blood Orange varieties. Feel free to use clementines as well if that's all you have on hand.
Pistachios are one of my favorite nuts because of their earthiness and are almost sweet and creamy when you bite down on them. We get the salt and black pepper-ed pistachios because we like that extra kick. We also just use the ones that are still in the shell, but feel free to buy deshelled nuts.
The vinaigrette is super simple: just combine 1 part white balsamic vinegar to 2 parts extra virgin olive oil with 1 tsp honey and salt and pepper to taste. I love using white balsamic vinegar for salads that have fruit in them because it is a slightly sweeter vinegar with a very clean taste that echoes the fruit nicely. You can use apple cider vinegar if you prefer or if that's all you have on hand.
One of my favorite parts of any salad or saucy dish is the leftover at the bottom. My guilty pleasure is lifting the plate up to my mouth and literally drinking it because it tastes so good. I do the same with sauces but what can I say - I'm a sauce gal through and through!
