Summer - especially late summer - is the season of peaches. They are incredibly floral and almost rich with their sweet flavor. Once peaches are ripe, there are so many different ways you can enjoy them. From raw in salads, to stewed down to jams and jellies, to the bases of sauces to be served with meats - peaches are one of my all-time favorite ingredients.
While summer is the optimal time to cut into peaches, you can honestly enjoy them all-year round with honey as a sweetener if they're not super juicy or sweet. This is where my peach toast comes in to play. Sliced peaches and honey are the star of this toast with whole milk ricotta as the base and chia seeds as the garnish. This can be served as a snack, breakfast, or even healthy dessert if you want something light and that doesn't require any baking.
