An assorted Italian antipasto spread is beloved my many for its varying textures, colors and flavors. Put that same combination together in a salad and you've got a delicious lunch or light dinner. My favorite ingredients include tomatoes, cucumbers, marinated artichokes, olives, mozzarella cheese, salami and garbanzo beans. Adding freshly torn basil makes this dish incredibly refreshing and fragrant. The vinaigrette is simple but effective: freshly grated garlic, dried oregano, red wine vinegar and extra virgin olive oil.
