Vivian Hana-PUMPKIN CREAM CHEESE MUFFINS

This muffin recipe will make you want to curl up with a book and a cup of tea on a cozy fall day. I have to say these pumpkin cream cheese muffins were DEVOURED within two days over in the Son household, so you know it's a good one 😉 My husband usually does not like desserts, but I noticed that some had gone missing the night I made them and come to find out he had been the little mouse who was enjoying them! He liked how they weren't too sweet and commented how moist they were. This recipe is definitely one that I will be making over and over again. I'm even thinking of making a variation with coffee to make a pumpkin crumble coffee cake...how does that sound?! The only thing I'd change is to add a muffin liner or paper so it's easier to remove from the pan. I used butter but it would have been a lot easier if I just used one of those.
