Zuppa Toscana is beloved by so many because it's a popular soup served at the Olive Garden restaurant chains. I grew up either eating at one of the locations or having it catered for holiday parties and it's still one of my favorite nostalgic comfort food places. The unlimited starters course is obviously my favorite part about the Olive Garden - and the Zuppa Toscana is always a part of my soup, salad and breadstick combination.
Zuppa Toscana is a hearty Tuscan soup with spicy Italian sausage, potatoes, kale and a touch of cream. It's spicy, creamy, and perfect for a cold rainy day in fall or winter. I love the texture the kale brings to this soup, and freshly grated parmesan cheese and red pepper flake on top is an absolute must. Serve this with my Italian Antipasto Salad or my Go-To Kale Salad and you basically have an at-home Olive Garden experience.
