I'm so excited that it's officially soup season! Soups are great all-year round, but I especially love them during this time of year because they are an easy way to get all the nourishment you need in one hearty bowl. This soup recipe came about initially because my corn was going bad and I needed to use it up. Whenever I have produce that's about to go bad, I tend to roast it in the oven with garlic and blend it with chicken stock to make a soup. So, I did just that with the corn this time too. I also realized I had a whole bag of broccoli that I needed to use as well, so I thought why not add combine two of my favorite soups - broccoli-cheddar and corn potage - together?
Let me tell you - this was incredibly delicious and satisfying. I love creating delicious dishes from ingredients that I already had, so I encourage you to look in your fridge and pantry this week and try this method of roasting the ingredients and then blending them with stock and/or cream to create a bowl of dreams this fall/winter.
